Green Goodness--Summer Guacamole!

Photo: Homemade guacamole with stuff from the garden plus grocery

Just in time for your 4th of July BBQ--enjoy this HEALTHY guacamole rather than prepackaged!

Green Goodness!
As you may have guessed, I am on a bit of an organic health kick. Good time of year considering my crazy urban garden is in full swing! I live in suburbia, but have a town home. Therefore, I use this time to grow veggies, fruits, flowers, and herbs either in my home or by potted plants. This yummy concoction--dare I say--rivals that of your popular eateries like Qdoba--or more importantly, Chipolte. It's THAT good--and with fresh ingredients?! You cannot say no to a healthy dose of avo!

Before I sing the praises of avocados and their protein, yet high fats. It also can be used to make your hair soft--and skin soft. Amazing little thing isn't it?

So, here's my recipe for my Green Goodness Guacamole!

2 Haas avocados (Ok, did not grow these, but organic or not at the grocery store--do it!)
1/4 sliced onion (again, not from my garden but I used red onion)
1 garlic clove (organic)
Cilantro leaves to liking
Parsley to liking
My chives probably got meshed in accidentally as well.
Lime juice!!
BLEND!

I think I may run tomatoes and corn through mine before serving, however--it tastes delicious without. I also used my Magic Bullet--but you can use your food processor, blender, Ninja, etc. You may need to add a bit of water to assist if it gets clogged with the creamy avo.

Enjoy :)!

Anti-Sugar Post Part II: Juice, Juice, Juice

So I am sure you have all heard of the cleanses making their way around. I tried the BP (Blueprint cleanse) a couple weeks back. I lost weight, felt great, and never craved sugar. However, it was super expensive. So, I decided to use my own organic items (I grew most of it myself) and created my own juices bearing in mind the BP juices.

I had left over pineapple, so I used that.
I grow my own parsley and mint so I used that.
Then, Organic Apples
Finally, I measured out about 2c of purified water via my filtered water system.

You can use any type of blending device you have--juicer, Ninja, or in my case, Magic Bullet.

Blend all ingredients, and strain.

The juice is naturally sweet, and a great supplement! I loved it for my lunchtime meal.

Anti-Sugar Post Part I

So for a variety of reasons, I am on an anti-sugar post. I am talking Splenda, Equal, Nutra Sweet, Raw Sugar. If you're looking to rid yourself of calories, fine, and artificial sweeteners fine. Though, I sometimes use a small amount of Stevia (natural). Here comes my post about... a healthy oatmeal alternative that is bound to keep you full during the wee ours of the work day. Best part? No cooking!

Ingredients:
Apricot
Handful of non-sugar or regular frozen cranberries
3/4 c Steel cut oats (amount however you desire)
1/2 c Coconut milk (I guess I am anti-dairy/lactose intolerant as well???)
Cinnamon to your liking!
Handful of chia seeds

Mix as desired

Keep in the fridge overnight... chia seeds grow, and get larger, so do not be alarmed. They will thicken your oats! Your oats will soak in the milk and actually become soggy as well.

And Presto! a HEALTHY alternative to your morning diet!

Chia seeds are good for filling you up--and an EXCELLENT SOURCE of ENERGY!
Cinnamon--controls your blood sugar
Steel cut oats have less sugar (to now sugar) than the quick oats
Coconut milk--better for our animals--and all that dairy is bad!
Apricots--well, they're nature's sweetners
Cranberries have amazing antioxidants.

And there you go ;)!

Breakfast in seconds!
