Eggplant Burgers--hello, summer ;)

So I got a little creative this week. It's my outlet from studying for another bar exam. However, during this exam--I am trying to weed out the caffeine and sugar. I'm also doing it after health reasons from family history. I am trying to eat healthier this time around for the exam. We are what we eat, right? And rather than be a candy fiend--sugar--fast food--no time--I'd like to be healthier. I'd also not like the stress weight gain. I wanted something easy and convenient that would not taste like crap microwaving...

Behold---Eggplant burgers!
They are vegetarian (sorry, vegan friends). They are delicious--and they are different. They are also healthy, low carb, and low fat. Woohoo! So, behold my summer creation.

Ingredients:

1 sliced eggplant--relatively thick slices
1 really thick tomato--think beefsteak--no romas or grapes here!
2 eggs--smashed and mixed
8 oz--fresh mozzarella--could you get away with shredded processed--yes, but why?!
2 tsp olive oil for the pan
Drizzles of Balsamic vinegar

1. Take all your fruits and veggies.
2. Wash, slice and dice
3. Sliced eggplant needs to be soaked in the eggs
4. Throw sliced eggplant in pan until brown--don't burn!
5. Remove from skillet, and repeat until done
6. In the meantime, slice the tomatoes if you have not done so. Also slice the mozzarella into chunks.
7. When all is cooled down take the two eggplant slices like a sandwich or a burger. Place the tomatoes and slice of mozzarella between. Drizzle with balsamic vinegar to your liking.

Woohoo! You just made a healthy dinner that is vegetarian--Go YOU!
